Potato and eggplant curry

Ingredients

1cup potatoe cubes( peeles and chopped in to bite size pices)
1 cup eggplant cubes
1 tomato chopped
2 garlic flakes
2 tbs oil
1/4 tsp turmuric
1/2 tsp cayanne pepper
1/2 tsp garam masala powder
salt to taste
chopped cilantro for garnish

Method

Heat oil in a pan ,add chopped garlic ,then add potato cubes ,eggplant cubes ,turmuric and salt saute for 2 to 3 min
.
Now add chopped tomatoes cayanne pepper ,garam masala ,1/2 cup water mix everything cover and cook on low flame for 10 to 15 min untill potatoes is soft
.
Adjust salt and garnish with chopped cilantro Done
.
Serve hot with warm tortilla or on a bed of rice
