Palak Paneer

Ingredients

1 cup paneer cubes ( indian cottage cheese ) u can find paneer in any indian store
1 bunch spinach leaves washed and chopped
1/2 cup onions chopped
1/2 cup canned chopped tomatoes
1 tsp chilli powder
1 tsp ginger garlic paste
1/2 tsp cumin powder
1 tsp garam masala powder
2 tbs butter
2 tbs oil
3 tbs heavy cream
salt

Method

Heat oil in a pan add chopped onion and sprinkle salt and sautee untill onions for golden color

Now add ginger garlic paste fry for a min then add chopped tomatoes cook for 3 to 4 min untill tomatoes are soft

Now add chopped spinach mix everything and cook on medium flame untill spinach in totally wilted ( do not cover while spinach is cooking)

Turn off the stove and let it cool once it is cool blend everything to a smooth paste

Now heat butter in a pan add above blended spinach paste ,chilli powder,cumin powder ,garam masala powder and paneer cubes mix everything and add 1/2 cup water simmer for 1o min

Finally add heavy cream mix and adjust salt

Done

Chole ( garbanzo beans curry)

Ingredients

1 can garbanzo beans
3 tbs oil
1 cardamom pod
1 onion chopped
1 cup chopped canned tomato
1 tsp ginger garlic paste
1 tsp garam masala powder
1/2 tsp turmuric powder
1 tsp chilli powder
1 tsp kasoori methi
2 springs of cilantro for garnish
salt

Method

Heat oil in a pan add cardamom pod ,chopped onions ans sprinkle with salt sautee on medium flame until light
brown

Now add ginger garlic paste and turmuric powder fry for a min then add chopped tomatoes mix everything and cover and cook on a low flame for 5 min until tomatoes are soft

Now add chilli powder ,garam masala powder ,kasuri methi and drained garbanzo beans mix everything and add 1 -1/2 cup water ,adjust salt and simmer for 10 to 15 min

DONE garnish with cilantro

Serve hot with rice or tortilla

Carrot and peas dry curry

Ingredients

2 cups frozen mixed Carrots and peas
1 Jalapeno chopped
3 tbs fozen fresh coconut
2 garlic pods chopped
1 onion chopped
3 tbs oil
salt

Method

Heat oil in a pan add chopped garlic ,chopped jalapeno and chopped onions sautee for 2 min

Now add defrosted carrots and peas mix everything ,cover and cook on low flame untill carrots for soft and cooked

Finally add 2 to 3 tbs frozen grated coconut min

Done

Serve hot or cold with warm whole wheat totilla

Aloo matar ( Potatoes with green peas )

Ingredients

2 potatoes cubed
1 cup frozen green peas
1 tomato chopped
1/2 onion chopped
1 tsp ginger garlic paste
1 tsp garam masala
1/2 tsp turmuric
salt
1/2 tsp cayanne pepper
3 tbs oil

Method

Heat oil in a pan add chopped onions sautee for 2 min then add ginger garlic paste cubed potatoes salt and turmuric mix everything and cover and cook for 10 min untill potatoes are half cooked

Now add chopped tomatoes ,gree peas .cayanne pepper ,garam masala .1 cup water cover and
cook on medium flame until everything is cooked and oil ozzes out

DONE garnish with chopped cilantro and serve hot with tortillas or zeera rice

Potato and eggplant curry

Ingredients

1cup potatoe cubes( peeles and chopped in to bite size pices)
1 cup eggplant cubes
1 tomato chopped
2 garlic flakes
2 tbs oil
1/4 tsp turmuric
1/2 tsp cayanne pepper
1/2 tsp garam masala powder
salt to taste
chopped cilantro for garnish

Method

Heat oil in a pan ,add chopped garlic ,then add potato cubes ,eggplant cubes ,turmuric and salt saute for 2 to 3 min
.
Now add chopped tomatoes cayanne pepper ,garam masala ,1/2 cup water mix everything cover and cook on low flame for 10 to 15 min untill potatoes is soft
.
Adjust salt and garnish with chopped cilantro Done
.
Serve hot with warm tortilla or on a bed of rice

Cabbage fry

Ingredients

2 cups shredded cabbage
1 onion chopped finely
1 jalapione chopped
1 or 2 garlic flakes
3 tsb frozen grated coconut
2 tbs oil
salt to taste

Method

Heat oil in a pan
.
Add chopped garlic ,chopped jalapione ,chopped onions sautee for 3 min until onions sweat
.
Add shredded cabbage ,and salt mix everything cover and cook on a low flame for 10 to 15 min until cabbage is cooked ,mixing in between every 5 min
.
Add frozen coconut and mix
.
DONE ,roll the cabbage fry on warm tortilla ,serve hot
